Tuna Casserole with Creamy Mushroom Sauce

Instructions

Step 1
Fill a medium saucepan halfway with water, cover, and bring to a boil. Uncover, add 1 tbsp salt and pasta, and stir for a few seconds. Cook until desired firmness, 8-10 minutes. Drain.

Preheat oven to broil and position rack under the broiler.
Step 4
Peel and small dice onion. Wash and slice mushrooms.
Step 5
Heat a sauté pan over medium heat.
Step 6
Melt 2 tbsp butter in pan. Add onion and mushrooms. Stirring frequently, cook until softened, 3-4 minutes.
Step 7
Grate ¼ cup of Parmesan.
Step 8
Sprinkle onion and mushrooms with 1 tbsp flour; stir to coat.
Step 9
Add milk, and stirring constantly, cook until slightly thickened, about 5 minutes.
Step 10
Add tuna, Parmesan, paprika, ⅛ tsp salt, and ⅛ tsp pepper. Stir until well combined. Remove from heat.
Step 11
Add pasta and toss to coat. Top with Cheddar Cheese, Place in the oven and broil until Cheese is melted, golden, and bubbly 3-4 minutes.
Step 12
To serve, place pasta in a bowl. Enjoy!
