Instructions

Step 1
Preheat oven to 180 degrees
Step 2
In a large bowl, mix the flour, sugar, baking powder, salt and cinnamon together.
Step 3
In a separate bowl, mash the bananas until very few lumps left.
Step 4
Mix in the egg, oil and vanilla to the bananas.
Step 5
Fold in the dry ingredients to the banana mixture using a fork. Do not over mix; just mix gently. Add the pecan nuts. Spoon into 9 x 5 inch loaf tin.
Step 6
Bake for 45-60 minutes until the loaf is golden brown and springs back when pressed gently with your finger. Leave in the tin for 10 minutes, then turn out onto a wire rack.
Step 7
Enjoy warm. Store leftovers at room temperature for 3 days. Freezes well.
