Ingredients

3 Slicesbacon
thick cut
1 lbchicken breasts
skinless/boneless
3 Tbspcoconut flour
1 tspsalt
divided
1 tspblack pepper
divided
1 tspgarlic powder
½ tspbaking powder
1 tsponion powder
1 tspparsley
2 Tbspolive oil
2 Tbspbutter
8 ozmushrooms
36gyellow onions
diced
4cloves garlic
minced
½ cupchicken broth
0.25 Cupmarsala wine
or more chicken broth
10 ozcauliflower florets
steamed
¼ cupfresh parsley
Instructions
Step 1
1. In a large skillet fry the bacon until cooked and crispy. Set the bacon aside.
Step 2
2. In a large shallow bowl/plate mix together the coconut flour, ½ tsp salt, baking powder, and ½ tsp pepper. Take the chicken and dredge them in the dry mix on both sides. Make sure to REALLY coat them well!
Step 3
3. Heat the bacon grease over medium heat and add in the olive oil. Then fry the chicken for 5-6 mins per side until lightly golden. Set the chicken aside.
Step 4
4. Add the butter to the skillet and melt it over medium heat. Add in the mushrooms and onions and sauté for 3 mins until tender.
Step 5
5. Add in the chicken broth, marsala wine and the remaining seasonings and mix well. Allow the liquid to start to lightly boil. Then add the cauliflower, chicken, bacon, and parsley in and toss in the sauce. Cover and allow to simmer for 3-4 mins.
