Instructions

Spray a rimmed baking sheet with nonstick cooking spray, brush it lightly with olive oil, or line it with parchment

Place the olive oil, balsamic vinegar, mustard, garlic, and brown sugar in a shallow bowl and whisk to mix.

Season with salt and pepper to taste.

Dip the fish fillets in the balsamic vinegar mixture, turning to coat them well, and place the fillets on the prepared baking sheet.

Let the fish sit at room temperature for 15 to 20 minutes.

Meanwhile, preheat the oven to 450°F.

Bake the fish fillets until just opaque throughout, about 8 minutes (the rule is about 10 minutes per inch of thickness, so eyeball your fish and take it from there).

The fillets should be nicely glazed on the outside and they should flake when you insert a fork into them.
Step 10
Transfer the fish to serving plates or a serving platter and serve.
