Ingredients
6 servings
1 lbboneless skinless chicken breasts
trimmed of excess fat
1yellow onion
diced
1zucchini
grated
¾ cupcarrots
shredded
2cloves garlic
minced
24 ozchicken broth
low sodium
2 x 15 ozcans great northern beans
drained and rinsed
2 x 4 ozcans diced green chiles
one hot, one mild
1 x 15 ozcan whole kernel corn
drained
1 tspsalt
½ tspblack pepper
1 tspcumin
¾ tsporegano
½ tspchili powder
¼ tspcayenne pepper
fresh cilantro
chopped
2 cupsfresh spinach
4 ozreduced fat cream cheese
softened
¼ cuphalf and half
sliced jalapenos
avocados
sliced
sour cream
fresh cilantro
minced
tortilla strips
shredded mexican cheese
Instructions
Step 1
Add chicken breasts to bottom of slow cooker, top with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
Step 2
Top with grated zucchini, shredded carrots, diced onion, minced garlic, great Northern beans, chili beans, green chiles, corn, and chicken broth. Stir.
Step 3
Cover and cook on LOW for 8 hours or on HIGH for 3-4 hours.
Step 4
Add cilantro and spinach. Stir.
Step 5
Remove chicken to large mixing bowl, shred, then return to slow cooker.
Step 6
Add cream cheese and half and half, stir, then cover and cook on HIGH for 15 minutes, or until chili is creamy and slightly thickened.
