1 ¼ cupheavy cream
1 tspslavender earl grey loose leaf tea
8 ozcream cheese
softened
¼ cupsugar
2eggs
room temperature
salt
1 Tbspcake flour
or all-purpose flour

Instructions
Step 1
add heavy cream and tea leaves (adjust amount of tea to taste) in a small pot and bring to a simmer on medium-low heat. steep for about 5 minutes. strain heavy cream tea - this should yield about 1 cup of heavy cream to add into the cheesecake. let heavy cream tea cool slightly

preheat oven to 500F

whisk softened cream cheese with sugar until very smooth and creamy

add eggs & pinch of salt, then mix

add heavy cream, then mix

sift in flour, then mix
Step 7
pour batter through a mesh sieve into a pan that is roughly lined with parchment paper

lower oven to 450F and bake for 25-30 minutes in the oven. the top of the cheesecake should be a deep brown color and the middle should be jiggly

let cool

make the honey lavender whipped cream: whip heavy cream with lavender syrup until soft peaks. then add in the honey and whip until medium peaks. do not overmix
Step 11
slice cake and top with whipped cream and dried lavender
