Step 1
Preheat oven to 375 degrees.
Step 2
Place a roasting rack/oven safe cooling rack on top of a baking sheet.
Step 3
Process the plantain chips, cassava flour, onion powder, garlic powder, and salt in a food processor (may have to do this in two batches). Put into a bowl.
Step 4
In another bowl combine the coconut milk and vinegar.
Step 5
Dip chicken in coconut milk and then dredge in the crumb mixture until thoroughly coated. Place on prepared rack.
Step 6
Bake for 25 to 30 minutes or until the chicken is cooked through.
