2boneless skinless chicken breasts
4boneless skinless chicken thighs
1 cupbrewed coffee
3 Tbspfresh lime juice
3 Tbspmolasses
1jalapeno
seeded and minced
1 Tbspgarlic minced
1 packagecoleslaw mix
2fresh mangos
peeled and diced
0.25fresh cilantro
chopped
½ cupsour cream
½ cupmayo
3 Tbspfresh lime juice
1jalapeno
seeded and minced
2 tsplime zest
grated
1 tspgarlic
minced
1 tspsalt
1 tspblack pepper
6ciabatta rolls
Instructions
Step 1
Combine jerk seasoning, oil, salt and pepper in a bowl. Coat chicken breasts and thighs with seasoning. Place chicken pieces in a slow cooker.
Step 2
Stir together coffee, lime juice, molasses, jalapeno, and garlic for the sauce in a measuring cup. Add sauce to the slow cooker. Cover and cook on low heat for 4-6 hours.
Step 3
Remove chicken from slow cooker and shred. Return meat to the slow cooker and mix with the remaining sauce.
Step 4
For coleslaw, combine coleslaw mix, mango, and cilantro in a bowl. Whisk together sour cream, mayo, lime juice, lime zest, jalapeno, garlic, salt and pepper to make dressing. Stir dressing into coleslaw mix.
Step 5
Serve shredded jerk chicken on toasted ciabatta rolls, topped with mango coleslaw.
