Instructions
Step 1
Preheat oven to 190°C.
Step 2
Place pumpkin on a baking tray and bake for 20 minutes until softened
Step 3
To make the dressing, combine olive oil, cumin, ras al hanout and salt in a bowl.
Step 4
In a pan sauté the onion until soft, about 3 minutes
Step 5
Add the chickpeas and sauté for another 5 minutes
Step 6
Add the dressing to the onion and chickpea mix
Step 7
Add the pumpkin, feta and spinach. Toss to combine well.
Step 8
Sprinkle with toasted pine nuts. Serve warm.
