2yellow potatoes
sweat, cut into 1/2 inch
¼ cupextra virgin olive oil
2 tspchipotle chili powder
2 tspspice
smoked
salt
black pepper
28 ozcan chickpeas
drained
1 headkale
large, shredded
4 cupsshredded brussels sprouts
2avocados
sliced
12sausages
Parmesan Tahini Dressing
Instructions
Step 1
Preheat oven to 425°F.

Cook Sausage for 10 minutes or until cooked through. Chop into bite-size pieces.

On a large pan with a baking sheet, combine the sweet yellow potatoes, 2 Tbsp olive oil, chili powder, paprika, and a pinch of salt and pepper.

Toss well to evenly coat, then transfer to the oven and roast for 20 minutes.

On another baking sheet with a pan add chickpeas, onions, brussel sprouts, and remaining oil with salt and pepper.

Toss well and roast for 25 minutes or until crispy. Saute kale on a baking sheet as well.

To make the dressing combine all ingredients in a blender and blend until smooth.

Toss everything together in a bowl with dressing. Top the salad with avocado, parsley, and additional cheese. Serve and enjoy!
