Instructions
Make the dough
Step 1
Combine water honey and salt then sprinkle top with the yeast and let sit for 5 minutes to bloom
Step 2
Measure 3 1/3 cups flour in a large mixing bowl with a well in the center
Step 3
Pour yeast mixture into the center and stir until the dough comes together
Step 4
Knead by hand in bowl for 2 minutes (it will be sticky)
Step 5
Cover the bowl with plastic wrap and let rise at room temp for 4-5 hours or until doubled in size
Step 6
Transfer dough to a floured surface and cut dough in half
Step 7
Fold each piece of dough eight times, making sure to pull each side to the center
Step 8
Form a ball in your hands and transfer each ball to a lightly oiled bowl (seam side down)
Step 9
Cover and refrigerate for 18 hours (If freezing, move to the freezer after the 18 hours in the fridge, and be sure to let thaw in fridge before use)
Make the pizza
Step 10
Preheat the oven to 450 degrees (or as high as it goes) and remove the dough from the fridge one hour before using it
Step 11
When the dough is at room temperature transfer it to a lightly floured pizza pan and pat the center of the dough gently (do not pop andy bubbles)
Step 12
Lift the dough over both knuckles and roll your knuckles under the center of the dough, working outward as you rotate the dough, leaving a thicker crust along the edge
Step 13
Continue working the dough until full size. it will shrink slightly so make it slightly larger than you would think
Step 14
Spread desired pizza toppings onto the crust
Step 15
Bake for 15-20 minutes, checking at 15 to make sure it does not over bake
