Instructions
Step 1
Wash the lemons thoroughly and zest 3 of them straight into the sugar. Mix that well until the sugar turns a pale yellow color.
Step 2
Separate your room temperature egg yolks and whites.
Step 3
Set egg yolks aside and save your egg whites for a different recipe.
Step 4
Juice all 4 of the lemons.
Step 5
Place your egg yolks in a small pot and whisk them until smooth.
Step 6
Add the sugar mixture to the yolks and whisk until everything is combined.
Step 7
Then, slowly whisk in the lemon juice and once all the lemon juice is added, turn the stove on LOW (level 2-3).
Step 8
Whisk it continuously for 8-10 minutes or until the mixture coats the back of a wooden spoon. DO NOT stop whisking or your eggs may cook and become clumpy.
Step 9
Turn the heat off and mix in the cubed butter until melted. If you would like a smoother texture, you can run the mixture through a strainer.
Step 10
Let the curd cool and then enjoy!
