The Dipping Sauce
Instructions
Step 1
Season chicken with half of peri peri seasoning, salt and pepper & set aside.
Step 2
On a large tray add potatoes, season well and add remaining peri peri seasoning. Drizzle with olive oil and mix.

Step 3
Add corn to the tray and cook in a pre-heated oven at 200C for 20 mins.

Step 4
Remove tray from the oven and turn temperature up to 220C. Add chicken & peppers to the tray, drizzle with olive oil and cook for another 20 mins.

Step 5
Combine mayo and hot sauce for dipping.
Step 6
Serve with dipping sauce, coriander and lime wedges.
