200gsalmon fillet
1 Tbsprapeseed oil
1 tspcajun spice
Onion
chopped
garlic
minced
50gmushrooms
sliced
spinach
50ggreen beans
4cherry tomatoes
halved
70glong grain white rice
½ tspdill
1 Tbspcucumber
grated
fresh lemon juice
½ tspgarlic
minced
rapeseed oil
200ggreek yoghurt
avocado
peeled and stone removed
1 Tbspfresh lemon juice
Instructions
Step 1
Preheat your oven to 180oC.
Step 2
In a medium-sized bowl, add the salmon, a tbsp of oil and the cajun spice add and the mix
Step 3
Place the salmon fillet on a tin-foil-lined tray, and cook in the oven for about 15 minutes.
Step 4
Meanwhile, in a pan, add a little rapeseed oil, onion, garlic, mushrooms, spinach, green beans and cherry tomatoes and cook until soft.
Step 5
Bring a pot of water - approximately 150ml, or double the volume of rice - to the boil. Add the rice and cook for 12 minutes or until water evaporates.
Step 6
To make the sauce, place the dill, cucumber, lemon juice, garlic and rapeseed oil in a bowl with the yoghurt and stir to combine.
Step 7
For the guacamole, place the avocado, olive oil and lemon juice in a small bowl, and mash with a fork.
Step 8
Serve the salmon and vegetables on a bed of rice, topped with the yoghurt dressing and guacamole.
