Cajun Salmon Tacos

ad The sun may not be shining but you can still enjoy some amazing summer food like these sizzlin’ cajun salmon tacos made using Original Mini Wraps. They are so easy to make & are perfect for all the family to enjoy. To make 4 tacos you will need: 250g salmon sliced in to chunks 2 tsp cajun seasoning Olive oil 4 Original Mini Wraps 2 avocados 2 salad tomatoes diced 1/2 red onion diced 1 garlic clove minced 1 bunch coriander finely chopped 1/2 red cabbage sliced 4 tbsp mayo 2 tbsp sriracha mayo 1 lime Salt & pepper Coat the salmon in a drizzle of oil & the cajun seasoning Place in a pan & cook on a medium heat for 5 mins either side until cooked through Whilst the salmon is cooking make the salsa by mixing together the tomatoes, red onion, half of the coriander, garlic & the juice of half the lime Dice up one of the avocados then with the other mash it up with the mayo & the juice of the other half of the lime and some salt & pepper. If you have a blender blitz it up to make it more of a sauce In the same pan that the salmon was cooked in toast the wraps one by one on a high heat for a few minutes either side Now everything is prepped start building the tacos. First add a drizzle of sriracha mayo then split the salsa, diced avocado, red cabbage & salmon between each taco & finish with a drizzle of the avo mayo Serve with tortilla chips, guacamole & salsa. You can also use the wraps to make the chips by slicing them in to triangles, placing on a baking tray with a drizzle of oil & some smoked paprika then bake in the oven at 180 for 10 mins ••• ••• •••

Instructions

Step 1
Coat the salmon in a drizzle of oil & the cajun seasoning
Step 2
Place in a pan & cook on a medium heat for 5 mins either side until cooked through
