Instructions
Step 1
Preheat the oven to 350 degrees F (175 C)
Step 2
Cut the tops off the garlic bulbs and place the bulbs in an ovenproof dish. Cover almost entirely with olive oil. Tightly seal the dish with aluminum foil. Bake for 1 hour. Check the tenderness and color of the bulbs--they should be very tender and golden brown. If needed, remove the foil and bake 30 minutes uncovered. Let cool
Step 3
Remove the bulbs from the oil. Using your fingers, press on the bulbs to remove the garlic cloves. Transfer to an airtight container and refrigerate until just before serving.

Keep the garlic-scented oil for another use such as Garlic Croutons or Ricotta Vinaigrette.
