Step 1
Preheat the oven to 375°F

Slice all your veggies
Step 3
Add your pasta sauce to the center of your puff pastry sheet, leaving a 1 inch border around the edges.
Step 4
Place your veggies in a large circle around the outer layer of the sauce, layering each thin slice on top of one another, alternating by type of vegetable. When that circle is complete, do another smaller circle closer to the center. If there’s still space, add more slices to fill completely
Step 5
Take the outer layer of the puff pastry, and fold it over the veggies to create a crust.
Step 6
Drizzle olive oil, Italian seasoning, and salt and pepper to taste
Step 7
Bake for 30-35 minutes, until veggies are cooked and the pastry is golden brown.
