Instructions
Toast Peppercorns
Step 1
Add peppercorns to dry sauté pan. Toast for 1-2 minutes
Step 2
In mortar and pestle, lightly crush toasted peppercorns maintaining medium to large sized size

Prepare Streak
Step 4
With butcher’s twine, wrap around circumference of steak and tie to form uniform round shape (this will help cook evenly)

Generously season with salt
Cook Steak
Step 6
Add oil to pan on very high heat. Hard sear both sides of steak
Step 7
Add butter, garlic, and thyme. Baste steak with flavored butter and cook steak to desired temp
Step 8
Remove steak from pan and rest for 10 minutes. Cut butcher’s twine from steak before serving
Make Pepper Sauce
Step 9
In same pan that was used to cook steak, remove garlic and thyme.
Step 10
Add peppercorns into pan. Add shallots and sauté till translucent
Step 11
Add cognac to pan and cook out alcohol (note: alcohol may catch fire in pan. Let fire burn out remaining alcohol in sauce)
Step 12
Turn stove to medium heat. Whisk in heavy cream and beef broth. Reduce sauce to gravy consistency
Serve

Pour peppercorn sauce over steak. Garnish with parsley
