Instructions

Step 1
Begin with slicing 1/4 of a lettuce into small strips and chopping coriander.

Then drain tuna oil/water from the can and add into a bowl.

Wash carrots and shave the first layer off with a peeler.

Start shaving the carrots and add into the same bowl. ( I used half of a carrot)

Add vinegar, olive oil, lemon, salt & pepper, coriander and mix.

In another bowl, crack 2 eggs with salt and mix.

On medium heat, cook the egg mixture and mix it around the pan to create fluffy scrambled type eggs.

Warm up your tortillas on a medium heated pan. Flip after 2 mins.

Assemble tacos! Start off with egg & lettuce, then add your carrot tuna salad on top.
