Banush or banosh is a dish prepared for special occasions. The Hutsul way of making this dish is with cornmeal cooked in smetana (fatty soured cream). Combine water, heavy cream, and sour cream in a pot and bring to boil over medium heat.

Add cornmeal and salt, stirring, and cook until thick over low heat.

Slice bacon into small slices and render fat over low heat. Strain the fat and use it for other dishes. Reserve bacon bits for topping.
