Salsa Verde Chicken and Rice Bake

Instructions

Step 1
Cook brown rice according to package instructions.
Step 2
Preheat oven to 350degrees. Place chicken in baking dish and pour 1/2 cup salsa verde over the top.
Step 3
Bake chicken about 25 minutes or until center reads 165degrees. Once done, remove chicken from oven and let rest for 10 minutes. With two forks, shred chicken and leave oven on.
Step 4
Lightly spray sides of 9x13 casserole dish and set aside.
Step 5
To the rice, add: 1/2 cup salsa verde, yogurt, taco seasoning, black beans and shredded chicken. Taste and add salt/pepper if needed.
Step 6
Place rice mixture into greased casserole dish and spread cheese evenly over the top.
Step 7
Place back into oven and bake 20 minutes until cheese is fully melted and dish is heated through.
