Spicy Sausage Pasta

Instructions

Step 1
Bring a pot of salted water to boil and cook pasta until al-dente.
Step 2
Peel and finely chop onion and garlic, then grate the carrot.
Step 3
Heat a pan over medium heat, once hot, add the onion, garlic and carrot. Sauté for 6-8 minutes, or until golden.
Step 4
Remove the sausage meat from the casing and add to the pan, then use a wooden spoon to break the sausage into small bite-sized pieces. Cook for another 3-4 minutes, or until golden.
Step 5
Roughly chop basil, then add to the pan along with chilli flakes, dried oregano and tomato paste. Cook, stirring occasionally, until the paste has darkened slightly; about 2 minutes.
Step 6
When the paste starts sticking to the pan, add the stock and tinned tomatoes. Bring to a boil then let simmer for 10 minutes and season with salt and pepper. Once the pasta is cooked, transfer it to the sauce, along with ~1/4 - 1/2 cup of pasta water and then parmesan cheese. Stir well and cook for another minute, then serve.
