Mini Blueberry Brown Butter Loaves

Think of a blueberry muffin but much lighter, fluffier, and even more delicious! These loaves are soft and airy with a sugary crumb topping that satisfies all your sweet tooth needs--without being way too sweet.

Instructions

Step 1
Brown your butter on the stovetop. Let cool.
Step 2
Preheat oven to 350°F. In stand mixer with a paddle attachment, beat brown butter, white sugar, and brown sugar together for 5 minutes until lighter in color.
Step 3
Add in eggs, vanilla extract, and lemon juice. Mix.
Step 4
In separate bowl, mix together flour, salt, and baking powder.
Step 5
While stand mixer is on a low setting, pour in half of the flour mixture. Once incorporated, pour in all of the milk. Again, once incorporated, pour in the rest of the flour mixture. Scrape the sides with a rubber spatula to ensure everything is mixed in.
Step 6
In a separate bowl, sprinkle 1 tbsp of flour on the blueberries, and toss to coat them. Fold coated blueberries into batter.
Step 7
To make crumb topping, combine ingredients, and use your fingers to pinch the flour and sugar into the butter until there are no large chunks of butter left.
Step 8
Pour batter into greased mini loaf pan, and sprinkle on the crumb topping.
Step 9
Bake at 350°F for 18-22 minutes. Let cool in pan before removing and serving.
