Ingredients
12 servings
1 cupold fashioned oats
gluten-free
½ cupoats
can also use
½ cupquinoa
cooked, for a variation
⅔ cuptoasted coconut flakes
unsweetened
coconut
can also use, raw
½ cuppeanut butter
i use all-natural, no other added ingredients
½ cupflax seed meal
½ cupsemisweet chocolate chips
dairy-free if available, miniature or regular size
⅓ cupmaple syrup
1 teaspoonpure vanilla extract
½ teaspoonsalt
if not added to your peanut butter
1 tablespoonchia seeds
optional add ins, hemp seeds, or whole flax seeds
½ teaspooncinnamon
Instructions
Step 1
Stir all ingredients together in a medium bowl until thoroughly mixed
Step 2
Cover and let chill in the refrigerator for half an hour
Step 3
It will be sticky, chilling makes it easier to handle
Step 4
Once chilled, roll into balls of about 1 inch diameter (a small cookie-scoop works well)
Step 5
You can add additional maple syrup or peanut butter if needed
Step 6
Store in sealed contained in refrigerator for about 2 weeks or freeze for longer
