The Potatoes
1kgpotatoes
2 Tbspsunflower oil
½ tspsalt
2 tspsmoked paprika
½ tspwhite pepper
1 tspcumin
½ tspfive spice
The Cashew Cheese Sauce
200gcashews
water
1 tspsalt
2 Tbspwhite wine vinegar
1white onion
1red pepper
4cloves garlic
2red chilli’s
1 tspsmoked paprika
½ tspwhite pepper
1 Tbspnutritional yeast

Instructions
The Cashew Cheese Sauce
Step 1
1. Soak the cashew nuts in just enough water to cover overnight
Step 2
2. Blend the cashews with the water they’re in and salt and vinegar til smooth.
Step 3
3. Dice and fry the onion and pepper til soft, dice the chilli and garlic and add these in with the slices, and tip in the cashew cream and nutritional yeast and simmer for 3-4 minutes
The Tempeh Bacon Bits

4. Slice the Tempeh into bacon bit sizes and fry in oil til crispy. Add the other ingredients and reduce down to coat the tempeh.
The Fries

5. Slice the potatoes into fry shapes and soak in water for 10 minutes. Drain and pad dry with kitchen roll. Add oil and spices and air fry at 180 for 30-35 minutes, or oven cook for 35-40 minutes.
To Garnish

6. Top the fries with the cheese sauce, bacon bits, and chopped spring onion, coriander, chilli, sriracha, and spices to garnish
