A typical Dutch biscuit recognised for its warm, spiced and cinnamony flavours.
Usually eaten in the months prior to St. Nicholas (December 5th) it has become a very popular treat and can be considered a staple in Dutch culture.

250gself raising flour
125gcaster sugar
i prefer brown sugar
2 tspspice mix
salt
100gbutter
cold, cubed
60mlmilk

Instructions
Step 1
- To make the spice mix, combine all the ingredients in a small bowl.
Step 2
- In a large bowl, combine the flour, caster sugar, spice mix, salt and butter. Mix well.
Step 3
- Add the milk and knead thoroughly for 5 minutes.
Step 4
- Roll into small balls and place on baking tray lined with baking paper. (Around 5g/ ball yields the best results and most similar to the store bought ones) The recipe yields around 100 biscuits
Step 5
- Bake at 200Β°C for 15 minutes.
