Vegan spaghetti Bolognese Cob Loaf

Literally the best! I recommend using individual loaves as it's easier to serve than trying to cut up a standard size cobb loaf when serving. Another great idea is to use meatballs instead of bolognese. If you're wanting to serve as individual loaves and can't find any small cobbs it's best to use a roll with a bit of density, like a sour dough or Italian ciabatta.

Instructions

Step 1
Make your favourite bolognese or meatball recipe to serve 4, along with 400 grams of spaghetti or pasta of your choice. Make sure you don't add too much pasta to your sauce mixture as you want there to be a good amount of sauce otherwise your finished meal will turn out too dry.
Step 2
Preheat oven to 180c (360f). Slice top from Cobb loaf and remove insides, leaving approximately 1-2cm of bread remaining around the edges and coat entire insides liberally with your favourite garlic butter using a pastry brush.
Step 3
Place the unfilled Cobb and remaining pieces of bread onto a baking tray lined with baking paper. Brush the pieces of bread with garlic butter and bake in the oven for 10 minutes.
Step 4
Using tongs, carefully place combined pasta and sauce mixture into the Cobb, top with some Mozzarella cheese and bake for a further 10 minutes. You may need to grill (broil) for a few more minutes if you want a nice golden brown cheesy topping. You can omit the cheese topping if desired.
Step 5
Top with parmesan cheese and freshly chopped basil then serve on a large plate or board surrounded by the garlic bread pieces.
