—Ingredients—
-3 cups basmati rice (wash and soak for 20 minutes)
-6 boneless chicken thighs (whole chicken cut into pieces)
-1 large eggplant
-3 potatos
-1 large onion
-1 bell pepper
-1 can of chickpeas
-1 cup of frozen mixed vegetables
-1 tablespoon of lawry’s seasoned salt
-1/2 tablespoon of salt
-2 tablespoons of chicken bouillon
-1 teaspoon chili flakes
-1 teaspoon black pepper
-1 teaspoon cumin
-1 6oz can of tomato paste
-3 cups of hot water
-3 tomatos
-oil for frying (use the same oil for the rice and the bottom of the pot)
:
-Wash and soak the rice for 20 minutes
-Boil the chicken for 10 to 15 minutes with lawry’s seasoned salt
-fry the eggplant, potatoes, onions and pepper
-put about 3 tablespoons of the frying oil to the bottom of a pot
-tomatos go next, the chicken, chickpeas, mixed frozen veggies, the fried eggplant, potatoes, onions and peppers
-put another pot on the stove add a couple tablespoons of oil
-drain and add the rice, chicken bouillon, cumin, chili flakes, black pepper, tomato paste, salt and water and mix everything together
-pure the rice mixture over the vegetables
-cover boil on high heat for 10 minutes the reduce the heat to really low and cook for 30 to 40 minutes.
-turn the heat off let it rest for 10 to 15 minutes flip and enjoy.
