Instructions
Step 1
In a little olive oil, fry the onion, chopped until starting to cook, then add sliced mushrooms. When starting to brown, add minced garlic. Cook for 30 seconds then add the mince to brown
Step 2
Once mince is browned add the tin of chopped tomatoes and the vegetable stock along with the oregano
Step 3
Add a good squirt of tomato puree
Step 4
Cook on medium heat for 5 mins then add the fresh basil
Step 5
Make cheese sauce by melting margarine then adding plain flour gradually to make a rioux; a dough like substance. Then cook it for a minute before adding milk gradually and whisking to get rid of lumps and until the right consistency desired. Add more more milk if too thick. Add as much grated cheese until getting right strength desired. (Add salt also to taste)
Step 6
In a large lasagne dish, put a layer of the mince base on the bottom and then a layer of lasagne sheets. Break some to fill any gaps. Then a layer of sliced up mozzarella as well as more mince. Then another layer of lasagne sheets which will then be topped with the mascarpone and more mince, followed by a last layer of lasagne sheets. Top this last layer with the cheese sauce and finish by covering it with sliced cherry tomatoes and grated cheese
Step 7
Cook in the oven for 45 mins
