Ingredients

115gsalted butter
cubed

½ cupbrown sugar

¼ cupwhite sugar

1egg

vanilla extract
or essence

235gall purpose flour
or plain

1 tablespooncornstarch
or cornflour

½ teaspoonbaking powder

¼ teaspoonbaking soda

½ teaspooncinnamon

2 tablespoonbrown sugar

2 tablespoonwhite sugar

½ teaspooncinnamon

Instructions
Step 1
Preheat oven to 175°c

Step 2
In a large bowl, combine butter and both sugars and beat until creamy. Add in egg and vanilla and whisk until combined. Add remaining ingredients (remember to sift in dry ingredients) and fold the mixture until combined.














Step 3
Cover the bowl with cling wrap and chill in the fridge.

Step 4
In a small bowl, combine both sugars and cinnamon and whisk until combined.




Step 5
Line baking trays with baking paper and roll the dough into desired sizes and roll them in the sugar-cinnamon mixture. Place them a few cm apart and flatten them down to desired thickness (remember they'll rise).


Step 6
Bake for 12 minutes in the oven (times depend on your oven and remember to turn the trays around at 6 minutes).

Step 7
Take them out of the oven and allow them to rest for 10 minutes.
Icing (optional)
Step 8
Combine icing mix, milk and cinnamon and whisk until combined.

Step 9
Pipe the mixture as you desire.
Step 10
Add toppings of your choice.
