I’m sure you’ve all heard of the green goddess salad, but have you heard of the Greek Goddess Bowl? 😆 Inspired by our time in Greece this summer, this simple, tasty bowl has all the goods to keep you satisfied and thriving all day long!

Instructions

Step 1
Pre-heat the oven to 200C
Step 2
Mix the potatoes, olive oil, garlic powder and oregano until coated. Cook in the oven for 30 minutes, stirring halfway through.
Step 3
To a bowl, add the yogurt, lemon juice, garlic and oregano and mix well.
Step 4
To build the bowl, add the potatoes, cucumber, tomatoes, capsicum, red onion, olives, and chickpeas and sprinkles some salt and oregano. Serve with the yogurt sauce.
