Sweet Potato Lasagna

Instructions

Step 1
In a large skillet, brown ground beef until no longer pink. Drain grease and rinse in colander if necessary.
Step 2
Return beef to skillet and add onion, pepper, kale and garlic. Cook for 5 - 7 minutes or until vegetables are softened.
Step 3
Add tomato sauce, pasta sauce and Italian seasoning. Heat through until bubbling hot. Remove skillet from heat.
Step 4
In 9x13, begin building lasagna. Place small amount of sauce (approximately 1/2 cup) on bottom of pan and smooth around. Layer ingredients equally in following order: - sweet potatoes - 1/3 sauce - zucchini - 1/3 sauce - sweet potatoes - 1/3 sauce
Step 5
Cover pan with tin foil. Bake in 375 degree oven for 1 hour. Remove foil and bake uncovered for an additional 15 minutes.
Step 6
Remove from oven and let stand 15 minutes before serving.
