160 gramsfresh chilis
washed and dried
40 gramsminced garlic
or more if you love garlic
40 gramsshallots
minced
30 gramsdried pepper flakes
5 gramsgalangal
minced
3 stalkslemongrass
thinly slice white parts and grind in food processor
20 gramsannatto seeds
2 ½ cupsneutral oil
divided
1 Tbspfish sauce
1 tspchili powder
1 tspsugar
1 tablespoonchicken powder
1 teaspoonmsg
Instructions
Step 1
Heat up oven to 250f or 121c
OvenPreheat
Step 2
Thinly slice lemongrass and add to food processor.
Step 3
Wash fresh chili, cut or rip stems off, and dry with paper towel
Step 4
Spread fresh chili peppers out evenly in baking pan.
Bake 250F or 121C for 2 hours (or less depending on size of chili). Be sure to watch the chilis so they don't dry up too much!
Step 5
Remove baking pan from the oven. Chilis should be easy to chop and on the dryer side. Roughly chop chilis, then grind in food processor.
Step 6
Mix grinded up chilis with the dried pepper flakes and set aside.
Step 7
In small pan, add 1/2 cup or 125 ml oil and allow to heat up on medium heat. Once it warms up, add annatto seeds. Keep stirring so the seeds don't burn. Remove immediately once it boils and strain.
Step 8
In a nonstick pan on medium heat (level 5 of 9), add the remaining 2 cups of oil. Once hot, add garlic and shallots. Keep stirring and fry until lightly golden and smells delicious!
Step 9
Add lemongrass and fry until it also turns lightly golden. Keep stirring!
Step 10
Add minced galangal (if you have it) and keep stirring.
Step 11
Add the mixed chilis and stir well to mix. Continue to cook on medium for a few minutes, or until the chilis have turned a nice golden color. Around 1-2 minutes.
Step 12
Lower the heat to low (about level 3) and add fish sauce, chili powder, and sugar continue cooking for a few more minutes or until desired color/aroma/flavor.
Step 13
Add chicken powder and msg.
Taste to test to see if you need more sugar or anything else.
