Instructions
Step 1
Preheat oven tray to 230°C/450°F.
Step 2
In a large pot bring water to a boil. Add salt and baking soda, then cook the potatoes for 8-10 minutes.
Step 3
Drain the potatoes and shake to roughen the surface.
Step 4
Transfer to a baking sheet, spread them out evenly and drizzle with olive oil. Season with rosemary, salt and pepper.
Step 5
Bake for 20 minutes, then shake and bake for another 30-40 minutes, turning them one more time.
