Instructions
Step 1
"Preheat Oven to 375 degrees
Step 2
Dry Chicken and season with 1/4 Tablespoon Curry Powder & Salt.
Step 3
Heat Large skillet over medium-high heat until hot. Add 1 tablespoon clarified butter. Add chicken, skin down. Cook until both sides are brown and crispy. Transfer to a casserole dish.
Step 4
Turn heat down to medium. Add rest of clarified butter and chopped onions. Cook until tender.
Step 5
Add minced ginger and garlic. Stir Fry for 30 seconds.
Step 6
Add paprika & curry powder. Stir until ingredients are well coated with spices.
Step 7
Add chicken stock, coconut milk, peanut butter, oyster sauce and bay leaves. Bring to a boil and stir until peanut butter is well disolved and blended.
Step 8
Add potato, peppers to the curry and ensure everything is well coated. Pour curry and ingredients into casserole dish and place in oven for 45 mintues or until chicken measures 165F.
Step 9
Boil white rice and serve.
