Heat Large skillet over medium-high heat until hot. Add 1 tablespoon clarified butter. Add chicken, skin down. Cook until both sides are brown and crispy. Transfer to a casserole dish.

Turn heat down to medium. Add rest of clarified butter and chopped onions. Cook until tender.

Add chicken stock, coconut milk, peanut butter, oyster sauce and bay leaves. Bring to a boil and stir until peanut butter is well disolved and blended.
