Bobotie with a twist

This recipe has been adapted to a higher fibre, lower fat version from my Aunt Nola, who grew in Krugar and has some fantastic knowledge of cooking, feeding her two boys the best food in South Africa. This high protein dish is a fantastic recovery fuel, bursting with flavour and taste. I also used the same recipe without beef (but doubled the lentils) for a friend of mine who is vegan. This went down really well.

Instructions

Step 1
1. Pre-heat oven to 180C and soak the bread in some water

2. Fry chopped onions in a little oil untill soft, add crushed garlic and continue to sautee for a few minutes. Once soft, add the minced beef and cook untill it starts to change colour.

3. Add the curry paste and gently fry for a couple of more minutes

4. Stir in the lentils, herbs, ginger, chopped dried apricots, sultanas, 2 bay leaves and mango chutney
Step 5
5. Cover and simmer for 10 minutes on a low heat. Tip into an ovenproof dish and squash down with a large spoon. Drain soaked bread and add to the dish, stirring well
Step 6
6. For the topping, beat milk and eggs and pour over the dish. Top with a few bay leaves and bake in the oven for 40minutes or untill golden brown.
