Instructions

For the Gnocchi

Step 1
Remove the seeds from the pumpkin and cut it into slices.

Step 2
Ease down the pumpkin slices on a piece of parchment paper and then put it into the oven. Bake the pumpkin for about 20 minutes, until it gets soft. This time might change depending on how big your pumpkin slices are. When it is done, let the pumpkin cool down for ten minutes.

Step 3
Remove the skin from the pumpkin and put the pulp into a large bowl. Smash the pumpkin with a fork.

Add the ricotta, grated parmesan, salt, pepper and nutmeg to the bowl. Use a spatula to mix everything.

While mixing start adding some flour. Keep adding flour until the mixture is dense and not too much sticky. The amount of flour depends on how much watery is the pumpkin.

Once the mixture is ready, prepare the gnocchi. Shape them as you prefer, using about 10g of mixture for each one.

For the sauce

Boil the potatoes in salty water until they are really soft.

When the potatoes are done, peel them and put them into a food processor. Add the some olive oil, salt, gated parmesan and a spoon or two of hot water. Mix for a minute and see how dense the sauce it. The result has to be a creamy sauce, in case you see it is too dense, add some more hot water.

Put some water in a pot and put on the stove. While we wait for the water to boil, continue preparing the other ingredients.

Cut the sausage in small pieces. Put a pan on the stove and when is hot, ease down the sausage. Cook it until is a little crispy. Remove the sausage form the pan and keep it aside. Leave the pan on the stove and decrease the heat.

Ease down the potato sauce in the pan and keep the heat low. Warm up the sauce and add some spoon of boiling water and make sure that the sauce is really soft and creamy. At this point put the sausage back into the pan. You can keep some sauce aside in case you want to use some as decoration.

Now that the water is boiling, put some salt in it and then the gnocchi. When the gnocchi come up to the surface of the water it means that they are ready. Use a slotted spoon to move the gnocchi from the pot into the pan with our sauce. Stir the gnocchi gently for a couple of minutes before serving. If you kept aside some sausage you can add it along with grated parmesan.
