Ingredients

4 Tbspolive oil
1 unitonion
diced
6cloves garlic
minced
2 Tbspginger
grated
3 unitcarrots
peeled and diced
3 ribscelery
diced
1 Tbsplemongrass
1 tspturmeric
1 tspdry thyme
1 tspdry oregano
1 tspdry rosemary
chopped
2bay leaves
1star anise
⅛ tspcayenne pepper
2250mlchicken stock
400gchicken boneless
125gegg noodles
1lemon juice
1lemon zest
2 tspsalt
1 tspblack pepper
1 cupparsley
Instructions
Step 1
Heat olive oil in a large pot over medium-high heat.
Step 2
Add the onions, garlic and ginger, and allow to sweat for 3 minutes or until translucent.
Step 3
Add the turmeric, celery, carrots, lemongrass, and the herbs and cook for 2 minutes.
Step 4
Pour in chicken broth
Step 5
Add chicken breasts, bring to a boil, then reduce heat to medium-low and let it simmer
Step 6
Add noodles. Cook for about 10-15 minutes until noodles are tender.
Step 7
Stir in the lemon zest, lemon juice, and parsley. Taste the soup and adjust salt and pepper to taste. Serve warm.
