Easy single serving sheet pan chicken is what dinner dreams are made of! One piece of chicken cooks alongside your favorite vegetables all on one sheet pan for minimal cleanup. It's just the right amount to serve one person.

Instructions

Preheat oven to 400F

Step 1
Place chicken on one side of parchment or foil-lined baking sheet. Add potatoes & tomatoes to the other.
Step 2
Drizzle olive oil over each. Season with salt, pepper, & Italian seasoning.
Step 3
Using hands, mix vegetables so they are all completely covered with oil & spices.
Step 4
Rub oil & spices into both sides of chicken.
Step 5
Bake (30-35 min.) until chicken is completely cooked through.
