For the Sauce
1 tspvegetable oil
¼ tspchili flakes
½ tspginger
1 Tbspgarlic
¼ cupsugar
¼ cupbrown sugar
½ cuporange juice
2 Tbspsoy sauce
¼ cupwhite vinegar
3 tspwater
2 Tbspcornstarch

Instructions
Step 1
Heat deep fryer to 350 degrees

Step 2
Whisk together the batter ingredients. Leave the oil out until other ingredients are incorporated then drizzle in the oil while whisking. Batter should have a thick consistency
Step 3
Mix the chicken into the batter. Stir until all pieces are fully coated. Cover and chill in refrigerator for 30 minutes
Step 4
Fry chicken pieces for at least 6 minutes. Do not overcrowd the fryer to maintain temperature
Step 5
Add the vegetable oil to a pan and heat. Add sauce ingredients one at a time while stirring. Leave vinegar for last so it does not "Burn off" or evaporate (big flavor). Stir until sauce thickens a bit.
Step 6
Add the fried chicken pieces and toss to coat. As a final touch, to add sheen and a hint of nuttiness, add the sesame oil and toss.
