1avocado

4seaweed sheets

1 ½ cupssticky rice
cooked, still warm

½ Tbsprice vinegar

½ Tbspsugar

½ tspsalt

For the Sweet Potatoes
Instructions
Step 1
Preheat oven to 400 degrees. Cut sweet potatoes like french fries. Add to bowl with miso, soy sauce, almond milk and sesame oil. Toss and cook for 35 to 45 min.


Step 2
While your sweet potatoes cook, incorporate rice vinegar and sugar to warm cooked rice.
Step 3
Cool sweet potatoes and assemble sushi roll by spreading cooled rice over the seaweed sheets. Add sliced avocado and sweet potatoes. Roll tightly, slice and enjoy!
