Step 1
Season chicken breast and bake at 400 for 20-25 minutes flipping over halfway through. While chicken is cooking, dice veggies and sauté in large stock pot until fragrant. Add garlic sauté for 1 minute. Add chicken stock and lemon juice, bring to boil. Boil for 5-10 minutes. When chicken is cooked remove from oven and dice, then add to pot. Add couscous, stir then turn off heat. Let stand for 5 minutes. Salt and pepper to taste. Serve and sprinkle with Parmesan.
