Chicken Zoodle (zucchini noodle) Soup

Instructions

Step 1
Add 4 cups (2 - 14.5oz cans) chicken broth to large pot. Add salt & pepper
Step 2
Add in 1 lb boneless skinless chicken breast and bring to a boil
Step 3
Meanwhile, In a separate pan, heat 1 Tbsp Ghee butter and 1 tsp garlic powder or 1 garlic clove and add in 6oz mixed veggies (onion,celery). Add a dash of salt & pepper. Cook about 5 mins or until softened.
Step 4
Once chicken is done (knife goes through easily), remove from pot and shred.
Step 5
Add the sautéd veggies to the pot with the chicken broth and add in 1/2 Tbsp of your choice of chicken seasoning(s).
Step 6
Return the shredded chicken to the pot with the veggies and bring back to a boil.
Step 7
Add in the frozen Zucchini noodles.
Step 8
Cook about 5 more mins until the Zucchini noodles have separated and softened (you don’t want to cook too long or they’ll get mushy).
Step 9
Serve and Enjoy!
