Healthy lunch in 10 mins ~ Lemon & Yoghurt Soup with Pasta & Kale 🌿🍋 save for later! 🍽
Serves 1
Ingredients
• 2.5 cups chicken or veggie stock
• approx 50g pasta
• 1 clove garlic
• 1 chilli (optional)
• salt and pepper
• Juice of 1 lemon
• large handful kale
• 1 tbsp yoghurt
• fresh dill or parsley
Method:
• put a small saucepan on a medium heat, add the stock, pasta, garlic, chilli, seasoning and lemon and let it come to a boil. Turn the heat down so it’s bubbling slowly and when the pasta is very al dente add the kale.
• when the kale is cooked through pour the soup into a bowl and add the yoghurt. Make sure the soup isn’t too hot otherwise the yoghurt will split!
• serve with dill and some extra virgin olive oil. Enjoy!!
