Breadcrumbed potato fish cakes

Ingredients

1 bag of fish bits
1/2 bunch of parsley
Black pepper to taste
Instructions
Step 1
Cook the fish on half roast half steam for 13 mins
Step 2
Remove the stems and finely chop the parsley and tarragon
Step 3
Zest the lemons
Step 4
Wring out the fish until as dry as possible and break up roughly
Step 5
Mix everything together with the mashed potatoes
Step 6
Add salt and black pepper to taste
Step 7
Chill over night
Step 8
Form the fish cakes using the scone cutter to size
Step 9
Chill again then panee with egg whites and Panko
