Chipotle Smashed Sweet Potatoes: Reloaded

Reason for Reload: The original application, with only five ingredients, was really a one-note dish, and that one note was sharp and spiky due to a chipotle/adobo punch with no supporting flavors to round things out. So, we've added maple syrup and one of my favorite heat sources, Urfa biber, the Turkish cousin to Syria's Aleppo pepper. The biggest upgrade, though, comes from moving the cooking from a steamer to the oven, where dry heat can create stronger flavors.

Heat the oven to 400°F.

Toss the sweet potatoes with the oil, maple syrup, salt, and Urfa biber in a large bowl. Scatter the sweet potatoes evenly on a half sheet pan.

Step 3
Roast for 20 minutes. Stir, then roast for 10 more minutes until caramelized and smashably soft.

Transfer back to the large bowl, add the butter, & mash with a potato masher, or run through a food mill with a fine sieve. Add the chile & adobo & continue mashing to combine.
