Ingredients

10zucchini
small, halved lengthways and deseeded

3 cupscorn
fresh, frozen or tinned

200gsour cream

0.5red pepper
medium, finely diced

0.5green pepper
medium, finely diced

2 rashersbacon
diced and cooked

1clove garlic
crushed

¼ cupshallots
finely chopped

1 Tbspparsley
finely chopped

1 ½ cupcheddar cheese
finely grated

tuscan seasoning
can substitute for mixed herbs
Instructions
Step 1
Preheat the oven to 170C.
Step 2
Microwave the corn for 5 - 6 minutes to soften slightly.
Step 3
Combine corn with bacon, pepper, sour cream, garlic, shallots and parsley.
Step 4
Fill each zucchini with 2 tbsp of mixture. Top with grated cheese and tuscan seasoning.
Step 5
Bake for 20 minutes or until the cheese has melted and the zucchini softened.
