Instructions

Step 1
Boil water on high heat and blanche the almonds, no longer than 1 minute.
Step 2
Take almonds out and put into bowl of cold water so they stop cooking. Then remove peels from the almonds and dry them a little bit with a towel.
Step 3
Put almonds on pan and roast in oven at 350 degrees for about 5-10 minutes (to release the oils in the almonds).
Step 4
Take almonds out and put them in blender or food processor along with shredded coconut.
Step 5
Blend until the butter is the consistency you want. This could take 8-15 minutes. Make sure to use a spatula and push the almond bits stuck on the side of the blender down every few minutes.
Step 6
You can add a tiny bit of neutral tasting oil towards the end of the blending process if you prefer your butter more liquid-y.
