Instructions
Step 1
Melt butter with half the amount of oil in a pan over medium heat.
Step 2
Pound chicken into 1/2 inch thickness using a kitchen mallet and season with salt and pepper.
Step 3
Brown chicken in heated pan for 6 minutes per side or until chicken is no longer pink inside. Remove chicken from pan and set aside.
Step 4
Return pan to stove and pour the remaining oil over medium heat.
Step 5
Add chopped green onion and minced garlic to pan. Saute until softened.
Step 6
Stir in chicken broth, mustard, heavy cream, and worcestershire sauce.
Step 7
Bring to a boil, then simmer on medium heat for 3 minutes or until liquid is reduced by half.
Step 8
Return chicken to pan and spoon sauce over chicken until well coated.
Step 9
Squeeze fresh lemon and garnish with chopped parsley.
