Instructions

Step 1
Cook pasta. Drain, reserving some of the starchy pasta water.
Step 2
In a large pan, melt 2 tablespoons butter. Add black pepper and stir it around in the butter to toast it, 1-2 minutes.
Step 3
Pour pasta water into the pan. Reduce heat to medium-low and add the parmesan, grana padano and pecorino romano. Stir until melted.
Step 4
Add remaining tablespoon of butter and stir until melted.
Step 5
Add pasta to the sauce and stir. Serve with more grated cheese and freshly cracked black pepper if desired.
